BACKGROUND
Produced from the secluded, monastic vineyards of the Holy Mount Athos, the Agioritiko Abaton Gold Selection is a prestigious expression of terroir and ancient winemaking tradition. The name "Abaton," which translates to "untrodden," pays homage to the sacred, pristine nature of the Mount Athos peninsula—a region where organic viticulture is not just a method, but a spiritual commitment to the purity of the land.
This premium blend marries the international structure of Cabernet Sauvignon (80%) with the indigenous Limnio (20%), an ancient Greek variety famously praised by Aristotle. The fruit is meticulously handpicked and sorted to ensure only the highest quality berries proceed to the "Mount Athos Vinification Technique." This traditional method utilizes open wooden vats (50 hl) during fermentation, a process that facilitates natural oxygenation to soften the wine's robust tannins and develop its signature velvety texture.
The wine undergoes a rigorous aging program, spending 16 months in 300L French oak barrels (meticulously split between first-fill and seasoned barrels) to impart complex notes of toasted coffee, bitter chocolate, and warm spices. Following the oak maturation, the wine is bottled with minimal filtration and aged for an additional 12 months in the cellar before release.
